Baked Mushroom Chicken Recipe

Ingredients:

4-6 Boneless skinless chicken breast halves (1 pound)
1 ½ cups flour
6 tbsp. butter, divided
3 cups sliced mushrooms
1 - 14.5 ounce can chicken broth
½ tsp. salt
¼ tsp. pepper
1/3 cup shredded mozzarella cheese
½ cup shredded parmesan cheese
½ cup sliced green onion

Directions:

1.     Flatten each chicken breast half to ¼ - inch thickness.  Place flour in an re-sealable plastic bag; add chicken a few pieces at a time.  Seal and shake to coat.

2.     In a large skillet, brown chicken in 3 tbsp. of butter on both sides.  Transfer to a greased 11x7 inch baking dish. In the same skillet, sauté mushrooms in the remaining butter until tender.  Add the broth, salt and pepper. Bring to a boil; cook for 5 minutes.  Spoon over chicken.

3.     Bake uncovered at 375 degrees for 15 minutes or until chicken is no longer pink.  Sprinkle with cheeses and green onions.  Bake 5 minutes longer or until cheese is melted.



MAGNIFICENT CHICKEN BREAST

1. Hot pan
2. A tablespoon of oil in pan
3. Season chicken with salt and pepper
4. Place 1 chicken breast in pan skin side down (12-15 minutes total to cook chicken breast)
5. When one side brown, flip chicken
6. Slightly crush 3 cloves of garlic with side of knife and place in pan with:
        A. Butter
        B. Fresh Rosemary
        C. A sprig of Fresh Thyme

7. Baste chicken with all the ingredients turning your chicken every 2 minutes until that 12-15 minute mark is reached
